Where does Peruvian Organic's beans come from?
The Region

Cajamarca, in Peru, is renowned for its exquisite coffee, grown in high-altitude, rich mountainous terrain. This region's unique climate and fertile soil yield beans with a distinct profile: full-bodied with a subtle, sweet acidity. Cajamarca coffee often features a delightful mix of flavors like caramel, nuts, and floral notes, making each cup a reflection of its lush, diverse landscape. The dedicated local farmers here use traditional methods, ensuring sustainable, quality production.




The Farm

Established in June 1969, COOPAFSI (Cooperative Agraria “Frontera San Ignacio” Ltda) has been a pioneer in promoting gender equality in coffee production. This cooperative is particularly notable for its emphasis on "women grown" coffee, empowering female producers who significantly contribute to both the quality and distinctiveness of their coffee. These women are not only involved in coffee cultivation but also actively engage in innovative projects to enhance their families' lives. They focus on producing high-quality, consistent coffee for various markets. In 2016, the cooperative formed a women's committee responsible for managing loans to help producers improve their land and invest in home improvements, crafts, and livestock. Additionally, they established a computer lab, ensuring all members have access to modern technology, furthering their commitment to development and empowerment.





Process & Harvest

Fully washed and patio-dried coffee offers a pristine taste profile with enhanced clarity and pronounced flavors. This meticulous process begins with washing the beans to remove the cherry and mucilage, resulting in a cleaner cup with bright acidity. After washing, the beans are spread on large patios, where they are sun-dried to achieve the perfect moisture content. This traditional drying method contributes to a consistent and high-quality brew, highlighting the bean's natural characteristics.
